Cooking Classes in Arizona

Within Arizona, you can find a variety of cooking class options. There are programs for novices in the field, as well as rigorous additional training for those with previous experience. Students can study classic techniques, modern sustainable cooking and cuisines from all over the world.

Arizona Western College

Located in Yuma, Arizona Western College offers courses in food selection and preparation, sanitation, menu planning, nutrition and personnel supervision, as well as a 1-credit field experience. Completion of the 25-credit culinary arts certificate program prepares students for an entry-level position within the food service industry.

Central Arizona College

The Central Arizona College (CAC) campuses in Coolidge and Maricopa offer three certificate programs and one degree program in culinary arts. To earn an 18-credit certificate in baking and pastry, students take classes in cake decorating, pastry and bread baking. The 16-credit Culinary Arts I program introduces students to culinary principles, food safety, baking and pastry, dining and beverage operations, nutrition and food service management. Credits may be applied toward the Culinary Arts Certificate II program, which adds catering, advanced baking and pastry and sustainable food practices to the coursework from the previous program.

CAC's 65-credit culinary arts associate's degree program offers four areas of concentration: baking and pastry, nutrition and dietetics, business and hospitality services and culinary arts. Credits from the program may be transferred to Northern Arizona State University's Hospitality and Restaurant Management program.

Classic Cooking Academy

Classic Cooking Academy (CCA) in Scottsdale offers courses for the aspiring professional chef and for non-professionals with a desire to enhance their cooking skills. The school offers 6-month/672-classroom-hour classic and Native American culinary programs. To gain practical experience, students cater local events. Upon completion of the courses, students receive a Diploma in Culinary Arts. Courses for non-professionals examine practical skills, pastry, and a selection of 1-day classes with dinners. CCA also holds classes for children and teens.

Cochise College

Cochise College in southern Arizona offers four culinary studies programs at its Fort Huachuca and Sierra Vista campuses. The chef garde manger apprentice certificate program includes the discussion of cold foods and salads, global cuisine and culinary preparation. The 24-credit chef patissier baker's apprentice certificate program covers purchasing and control, cake decorating, breads, pastry and advanced confections. Students in the sous chef apprentice certificate program learn about saucier, breads & pastry, garde manger and advanced gourmet food prep, as well as taking a culinary field experience. The 64-credit associate's degree program in culinary arts includes 40-43 credits in the culinary arts, such as nutrition, pastries, dining service management and sanitation.

East Valley Institute of Technology

The East Valley Institute of Technology (EVIT) is a public vocational school with courses for high school students and adults in Mesa, Arizona. Qualified high school students from the area can attend tuition-free. The culinary arts programs at EVIT are primarily intended for high school students; limited slots for adult students are available in these programs. Certificate programs, which are each 2-4 semesters, are offered in culinary arts and in commercial baking and pastry arts. Classes include hot and cold foods, baking and pastry, food prep basics and breakfast garde manger. In the American Culinary Federation-accredited programs, students have the opportunity to gain hands-on experience cooking for special events, including Mystery Chef Dinners. They also work in the school's 5th Season restaurant and bake the breads, pastries and cakes offered for sale. Coursework prepares students for entry-level positions within the food service industry. Internships and work-study options are available.

Estrella Mountain Community College

Located in Avondale, Estrella Mountain Community College offers four programs in culinary studies. The basic culinary studies certificate program introduces students to culinary principles and includes classes in menu planning, baking, catering and sanitation. In the baking and pastry certificate program, students learn about classical desserts, specialty breads and other pastries. The school offers a 41-credit culinary studies certificate program that includes classes in commercial baking, regional cuisine, nutrition and gourmet foods, along with culinary principles, nutrition and sanitation.

The Associate in Applied Science in Culinary Studies program requires 24-25 credits in core general education courses, in addition to culinary studies courses like global cuisine, catering and gourmet foods. This program requires 500 hours of hands-on work in a commercial kitchen. Students are able to practice their skills in the school's Regions restaurant.

Mohave Community College

Mohave Community College, found in Kingman, has three programs in culinary arts. These include a comprehensive culinary arts certificate program, which is accelerated for completion in 3 semesters. To the comprehensive certificate, students may add a 12-credit baking and pastry program. Taken separately, the baking and pastry certificate is a 30-credit program and includes culinary basic courses. Mohave also offers an Associate of Applied Science in Culinary Arts and Hospitality Management. Courses include classroom and hands-on experience in management, baking and pastry, cooking techniques, world cuisine, sanitation and a general education core.

Phoenix College

Located in Phoenix and part of Maricopa Community College, Phoenix College provides culinary programs from basic food preparation to a 65-credit associate's degree in culinary studies. Certificates of completion are awarded in commercial food prep, commercial baking program and culinary studies. An associate's degree is granted to those who complete the 65-credit culinary studies program. Courses include cooking principles, baking, volume food production, sanitation and safety, menu planning, nutrition and customer service. Students in these programs must complete a culinary practicum.

Pima Community College

Culinary arts courses are offered at Pima Community College (PCC)'s Desert Vista Campus in Tucson. Programs include a 29-credit certificate program in culinary arts with classes in cold and hot foods, safety and sanitation, restaurant operations, nutrition, bakery and pastry and international cuisine. The associate's degree program in culinary arts addresses restaurant operations, baking and pastry, nutrition, sanitation and safety, hot and cold foods, catering and international cuisine. Students are also introduced to sauces, cake decorating, candy making and chocolate, and they participate in a co-operative work experience.

PCC also offers food industry training programs that are clock-hour rather than for-credit courses. These are designed primarily for those with previous food prep experience. The certificates include baker's helper (900 hours), cook's helper (705 hours), kitchen helper (335 hours), pantry cook (605 hours), prep cook (900 hours) and a pre-apprentice program (1,000 hours).

Scottsdale Community College

Scottsdale Community College in Scottsdale offers certificate of completion or associate's degree options in culinary arts, culinary fundamentals and culinary studies. Certificate of completion programs include culinary classes, but they don't require general education credits. The associate's degrees add 25-27 general education credits to the culinary coursework. The culinary fundamentals programs introduce students to the food industry with courses such as culinary basics, hot foods and breakfast. The culinary studies program focuses on commercial, high volume skills in cooking, along with purchasing, baking, world cuisine and advanced pastry arts.

The culinary arts programs, which require 35 hours per week in hands-on participation, are designed for those who wish to become professional chefs. First-semester students gain experience in a casual lunch environment, and second-semester students focus on the evening, formal dining restaurant.
