Programs at Valencia College

Valencia College is located in downtown Orlando and offers both certificate and associate's degree programs in baking and pastry management. These programs provide students with the opportunity to learn in state-of-the-art kitchens under the direction of top chefs and instructors. Being so close to Orlando-area theme parks and tourism could provide an advantage for students looking for career opportunities in the culinary industry.

Certificate in Baking and Pastry Management

The 35-credit baking and pastry management certificate program is designed for immediate employment or career development. The program can be completed in 1 year or less and includes classes in cookies and tarts, baking ingredients, specialty breads and pastry techniques. Students must also complete an internship in baking and pastry management. The courses in this certificate program can be applied toward the associate's degree in baking and pastry management at Valencia College.

Associate of Science in Baking and Pastry Management

The Associate of Science (A.S.) program in baking and pastry management is for students who plan to become pastry chefs, as well as those already working in the culinary industry who wish to increase their career skills. The program includes courses related to running a food service organization with classes such as food service and beverage management, catering and banquet management. Baking and pastry studies cover classical and contemporary cakes, chocolates and confections, production pastries and desserts, and confectionary art design. Students have the chance to enroll in a culinary competition class, as well as an internship in baking and pastry.

Programs at Daytona State College

Daytona State College is located about 50 miles northeast of Orlando, just blocks from Daytona Beach. Programs are offered through the Hosseini College of Hospitality and Culinary Management, and students can gain practical experience in the school-run Café 101 restaurant and coffee shop.

Certificate in Culinary Operations with a Baking and Pastry Specialization

This 20-credit vocational certificate program can prepare students for careers as pastry chefs, bakery managers and wedding cake specialists. Some of the required courses teach skills in cakes and petit fours, pastries, artisan breads, and chocolate and pastillage. Students can choose to earn this certificate along with the associate's degree in culinary management at Daytona State.

Associate of Science in Culinary Management

The A.S. program in culinary management trains students in food and beverage management. Some courses that could be helpful for a career in bakery and pastry arts include catering and buffet management, baking and food production. Students also complete 9 credits in hospitality practica at school-operated restaurants. In addition to culinary classes, students take courses in cost control, purchasing, safety and personnel.

Orlando Tech, located 5 minutes north of downtown Orlando, has a 15-credit certificate program in commercial foods and culinary arts. A bachelor's degree in restaurant and food service management is available at the University of Central Florida, which is about 15 minutes from downtown Orlando. This program focuses on some areas helpful for a bakery and pastry arts career, such as catering, design and food preparation.
