However, a few community and technical colleges do offer certificate programs specifically in baking and pastry arts so students can fully immerse themselves in this discipline. Hennepin Technical College

At Brooklyn Park's Hennepin Technical College, students can learn baking and pastry arts through 2 certificate programs, a diploma program or an associate's degree program. The Culinary Assistant Occupational Certificate program includes 1 basic baking course and 5 additional classes. An advanced baking class is included in the Culinary Gourmet Technician Advanced Technical Certificate program, which requires students to complete the culinary assistant certificate program or the first semester of the diploma or associate's degree program before enrolling.

The diploma program includes both the basic and advanced baking courses. However, the associate's degree program includes both of these classes in addition to a class where students can learn to make showpieces from chocolate, sugar and other confectionery ingredients. Hennepin Technical College's culinary programs are accredited by the American Culinary Federation Education Foundation.

Minneapolis Community and Technical College (MCTC)

Students in Minneapolis can enroll in MCTC's baking certificate program. To qualify for the program, applicants must have completed approved reading, writing and math classes. The 16-credit program includes classes in food purchasing, baking basics, sanitation, nutrition and advanced baking. Students can also enroll in the Culinary Arts Certificate program and take 1 basic baking course in addition to basic cooking, sanitation and nutrition classes.

A diploma and associate's degree program in culinary arts are also available. The diploma program requires 54 credits, and the associate's degree program requires 60 credits. Both options include basic and advanced baking courses. The associate's program requires students to complete more elective courses. All culinary students gain hands-on training in labs and in the on-campus dining facility.

Minnesota State Community and Technical College (MSCTC) - Moorhead

The MSCTC campus in Moorhead offers a 64-credit diploma program in culinary arts, which is taught by 2 faculty members. Although this program focuses more intensely on cooking methods, students complete a baking course where they learn to make various desserts, pastries and breads. This class has a lab component so students can engage in hands-on learning.

Saint Paul College - A Community and Technical College

Students near the city of Saint Paul can find a Baking and Decorating Certificate program at Saint Paul College. This program teaches students bread-, pastry- and cake-baking skills. The classes in this program cover culinary basics, sanitation, culinary math and cake decorating.

Students can also learn relevant baking and pastry arts skills in the culinary arts diploma and associate's programs. In both programs, students complete an advanced pastry arts class, a beginner's cake decorating class and a retail bakery class. Culinary arts diploma and associate's degree programs are available at South Central College in North Mankato. Both of these programs offer 2 relevant baking and pastry classes. In the breads course, students learn to make a variety of breads, croissants, danishes and rolls.
