Massachusetts has a few school options for students seeking baking and pastry career training programs. While many schools in the area offer culinary programs, only five programs offer specialized training in the baking and pastry field. Students may learn about desserts, pastries and advanced baking techniques.
Bristol Community College
Bristol Community College (BCC) is a 2-year school with three full-time campuses located in Fall River, Attleboro and New Bedford. The learning institution offers an Associate of Applied Science in Culinary Arts program with a focus in baking and pastry. The program blends hands-on exercises with theory-based courses, so that students may work as baking and pastry professionals in a variety of positions. The degree program includes art skills for bakers, advanced pastry art, baking technology and a capstone experience for bakers. BCC participates in the state's MassTransfer program and has designed many of its courses to directly transfer credit to other institutions.
Bunker Hill Community College
Boston's Bunker Hill Community College is a 2-year school that offers associate's degree and certificate programs to almost 13,000 students. The college offers a pastry arts certificate program to teach students the basic skills needed to acquire entry-level positions in the baking and pastry industry. The 29-credit program includes an introduction to culinary arts, a principles of baking class and an advanced desserts and pastries course.
Massasoit Community College
Massasoit Community College enrolls over 8,000 students at its Brockton campus. The school's culinary arts program includes courses on yeast doughs, introductory baking, classical deserts and advanced pastries. The program has a field experience requirement, which requires students to complete 240 hours of paid or unpaid work in food service. At the completion of the program, students may be eligible to apply for a food production or pastry certificate.
Newbury College - Brookline
Brookline's Newbury College is a small independent school that offers bachelor's and associate's degree programs in 20 majors. A 65-hour associate's degree program in baking and pastry is available. The degree program focuses on the production and plating of desserts, baked goods and confectioneries. Samples courses include cake artistry and artisan bread baking. An 18-credit pastry arts certificate program is also offered, and courses cover cake decorating, breads and pastries.
North Shore Community College
North Shore Community College is a 2-year institution in Danvers with about 8,000 undergraduate students enrolled. The school's Associate of Applied Science in Culinary Arts and Food Service program includes hands-on courses taught in the campus restaurant kitchen. The required classes include introduction to bread, pastries, desserts and merchandising. The program also includes specialty courses that cover danish, croissant, choux and puff pastry desserts. An internship and a cooperative education experience are a part of the program. The school also offers a basic culinary arts certificate program. Students can take baking, cake decorating and cupcake mania classes.
