Located in Asheville, Asheville-Buncombe Technical Community College offers both an associate's degree in baking and pastry arts and an associate's degree in culinary arts. Both programs provide cake decorating courses.

Central Piedmont Community College in Charlotte offers an associate's degree program, as well as several specialized certificate programs that include cake decorating instruction.

Located in Durham, this community college provides non-credit cake decorating courses through its continuing education program. In Jamestown, Guilford Technical Community College runs three programs for students interested in cake decoration. The Associate of Applied Science in Culinary Arts program is the only one that includes a baking II course, which further covers cake decoration and presentation.

Lenoir Community College in Kinston offers cake decorating courses through two of its culinary arts programs. Sandhills Community College

Located in Pinehurst, Sandhills Community College offers four programs in baking and pastry arts and culinary arts.

Students in the Associate of Applied Science in Baking and Pastry Arts program must complete a minimum of 74 credit hours. Courses focus on basic culinary and baking skills during the first semester; then, students advance to create tortes, artisan breads, and petit fours. By the fourth semester, students complete a cake design and decorating course, focusing on advanced decoration techniques of specialty cakes.

For aspiring bakers not interested in pursuing a two-year degree, Sandhills Community College offers a baking and pastry arts certificate program. Students complete 16 credit hours. Three of those are spent in the baking I course, studying cake finishing techniques.

Sandhills Community College also offers both an associate's degree and certificate in the culinary arts. For an Associate of Applied Science in Culinary Arts, students must complete 73 credit hours. Coursework includes sanitation and global cuisines, as well as baking I and baking II.

For a certificate in the culinary arts, students are expected to complete 18 credit hours. Three credit hours are devoted to the baking I class, where students learn cake finishing techniques.

Wake Technical Community College

Wake Technical Community College in Raleigh offers six separate programs for students interested in cake decorating. Students can pursue an associate's degree, a certificate or a diploma in baking and pastry arts or culinary arts. All of these programs offer baking and cake decorating courses.

Courses offered as a part of the Associate of Applied Science in Baking and Pastry Arts program focus on desserts and cakes. Three credit hours are dedicated to a cake decorating course. Other required topics include European cakes, tortes, cold desserts and chocolate artistry. Students must complete 71 credit hours, including a cooperative internship.

Those pursuing a certificate in baking and pastry arts must complete 16 credit hours. Course requirements include a cake design and decorating course, which covers cake assembly, advanced piping techniques, fondant and other advanced skills.

Wake Technical Community College's baking and pastry arts diploma program spans five suggested semesters of study. Course requirements include cake design and decorating, European cakes and tortes and sanitation. A majority of credit hours are required within the lab, stressing hands-on culinary experience.

For students desiring cake decorating courses within a program that covers various culinary skills, the college offers an associate's degree program in the culinary arts. The program covers food and beverage service and classical cuisine, but still gives students the opportunity to take baking courses, as well as a cake design and decorating course. The associate's degree program requires the completion of 72 credit hours, including a co-op internship.

Students can also enroll in the college's certificate or diploma program in culinary arts, also called culinary technology. Both programs offer a baking I class, which covers cake finishing techniques. The diploma program also gives students the option to take more advanced cake decorating courses.

Wilkes Community College

Located in Wilkesboro, Wilkes Community College hosts five programs that include cake decorating instruction, as well as non-credit courses. For students interested in an Associate of Applied Science in Baking and Pastry Arts, Wilkes Community College requires a minimum of 74 credit hours. The program covers specialty breads, nutrition, purchasing and fine culinary techniques. The course on cake design and decorating covers cake layering, cake assembly and advanced decoration techniques. The course on European cakes and tortes, also required for graduation, covers icing techniques and the layering of specialty pastries.

Requiring a minimum of 44 credit hours, the college's bakery and pastry arts diploma program includes multiple courses that cover cake decorating techniques. Students must complete baking I, baking II, European cakes and tortes, and cake design and decoration, all of which cover basic and advanced cake decoration.

Students can also choose to pursue an associate's degree, certificate or diploma in the culinary arts. The line cook certificate program and the culinary arts diploma and associate's degree programs all require the course baking I, which touches on basic icing techniques. However, the Associate of Applied Science in Culinary Arts also includes baking II, which covers more advanced techniques than baking I.

Lastly, for students desiring non-credit courses, Wilkes Community College has offered four relevant classes in its continuing education department. Availability and fees of non-credit offerings may vary by semester; Spring 2013 information is given here. The beginning cake decorating course offers instruction on using utensils, creating florals and working with icing. The course runs for three-hour sessions, once a week for 11 weeks. The series is $85, plus supplies.

The non-credit fondant course stresses the skill of fondant creation and layering. It runs for three-hour sessions, once a week for eight weeks. The series is $85. A non-credit cupcakes course introduced students to seasonal and holiday cupcake designs. This $85 course included ten three-hour weekly sessions.

A baking and pastry career 4-class series addresses cakes, cookies and pies; bread; candy; and pastries.
