Clark College in Vancouver, Washington, serves a student body of over 10,000 undergraduates. The baking program, which is part of the culinary arts division, features a professional baking lab that gives students hands-on experience and prepares them for professional positions in the industries of baking and cake decorating.

Associate of Applied Technology in Baking and Baking Management

This 2-year program begins with baking theory to ensure that students have a solid grasp on the properties of foods and ingredients and how they relate to each other. Students then begin their first baking lab to master cake production and decoration, along with sweet rolls, doughnuts, breads, cookies, pastries and pies. Although cake baking and decorating is integrated throughout the baking curriculum, cake decorating classes are also included separately at beginning, intermediate and advanced levels. Students have the opportunity to work in approved bakeries for school credit and gain work experience. Advanced students have the option to create and execute independent study projects in an area of their choice.

Lake Washington Technical College (LWTC) is located Kirkland, Washington, which is a suburb of Seattle . In addition to its associate degree program in baking arts, LWTC also offers cake decorating courses as part of the non-credit continuing education program.

Continuing Education Courses in Cake Decorating

In the beginner's cake decorating course, students are introduced to standard techniques in piping, borers, flowers and icing. The fondant cake decorating class teaches students how to create different shapes, such as human figures, ribbons and fish, using a variety of unusual techniques. Styrofoam is used as a practice model so students can take their creations home and recreate them on real cakes, or students may bring in their own cakes to decorate in class. Other specialized cake decorating classes include gum paste figure modeling and pulled sugar artistry.

Associate of Applied Science in Baking Arts

This program prepares students for positions as cake decorators and designers, assistant pastry chefs, candy makers and bakers. Students are trained in a working bakery, which is open to the public. Proficiency is gained in cake designing and decorating, breads, pastries and chocolate, as well as basic cake mixing and decorating styles and techniques. Some of the cake decorating classes offered by the program include artisan chocolate and confections, specialty cakes and centerpiece constructions. Graduates are eligible for certification as a certified pastry culinarian by the American Culinary Federation.
