Boston, MA, Schools with Cooking Classes
Several schools in the Boston area offer cooking classes through their culinary arts certificate and degree programs. - Boston University, located almost 3.5 miles from the downtown, offers a short-term certificate program in the culinary arts.
- A midsize public school located a little over 1.5 miles from the downtown, Bunker Hill Community College, offers certificates in cooking and pastry making, as well as an associate's degree program in the culinary arts.
- Newbury College - Brookline, which is about five miles from the downtown, offers the greatest variety of program options of the three featured schools, including culinary certificate, associate's degree and bachelor's degree programs.
Students in the culinary arts program at Boston University receive training in a laboratory kitchen set up with state-of-the-art equipment and individual cooking stations. They also participate in classroom instruction and view live cooking demonstrations.
Culinary Arts Certificate
Classes in this 4-month program teach students various methods for cooking food, such as roasting, simmering, braising, grilling and frying. The curriculum also covers a variety of cuisines ranging from Mexican to Japanese. Other topics of discussion include menu planning, the use of kitchen equipment, sanitation and restaurant management.
Bunker Hill Community College
Bunker Hill Community College features an on-campus restaurant where students in the culinary arts programs get hands-on experience preparing food. Students in the certificate programs can transfer the credits they've earned to the culinary arts associate's degree program.
Culinary Arts Certificate
This certificate program qualifies students for entry-level positions as line or prep cooks. Program coursework covers menu planning, purchasing and food sanitation, as well as cooking and baking techniques. Students must complete 22 credits of coursework to receive this certificate. Classes are offered on the weekends over the course of two semesters.
Pastry Arts Certificate
Curriculum for this 29-credit program is similar to coursework required for the culinary arts certificate. Students take the same food sanitation, baking and culinary arts introductory courses, in addition to cake decorating and international pastry classes. Advanced cooking classes in desserts and bistro cuisine are also included.
Associate in Science in Culinary Arts
Students in this 63-credit program prepare for supervisory or managerial positions in restaurants and other food service facilities. Many of the cooking classes offered in the certificate programs are included in the degree curriculum. Coursework also covers food and beverage operations, nutrition science and dining service essentials. Students are required to complete a summer internship as well.
Newbury College - Brookline
The cooking programs at Newbury College - Brookline are offered through the Roger A. Saunders School of Hotel and Restaurant Management. Students in these programs can receive experience working in the Lois and David Weltman Dining Room on campus.
Professional Cooking Certificate
This 18-credit certificate program teaches students how to make stocks, soups, sauces and buffet foods. In addition to four core courses, they choose two courses from a slate of electives in such topics as contemporary, Italian trattoria and classic French cuisine.
Pastry Arts Certificate
Students must complete 18 credits to receive this certificate. They learn how to decorate cakes and bake breads, rolls and desserts. Students also receive instruction in basic knife skills, the use of weights and measures and advanced pastry decorating techniques.
Associate in Applied Science in Culinary Arts
Students must complete at least 65 credits to earn the associate's degree. In addition to the same topics covered in the professional cooking certificate program, they study methods for baking desserts, rolls and breads. A handful of general education courses in the humanities, math and social sciences are also included in the curriculum. Students have the option of completing internships or hospitality electives to fulfill program requirements.
Associate in Applied Science in Baking and Pastry Arts
This program might be of interest to students who'd like to take advanced classes in artisan breads, classical pastries, candies and tiered cakes. They can also learn the basic cooking skills and techniques for successfully operating a retail bakery.
Bachelor of Science in Hotel, Restaurant and Service Management
This bachelor's degree program offers students the choice of two concentrations. Topics covered in the culinary management option include wines and spirits, breads and rolls, nutrition, café cuisine and desserts. Food and beverage cost control, accounting and hospitality management courses are also included in the curriculum. Students enrolled in this program can choose to write a culinary management bachelor's thesis or complete a culinary management internship.
