Degrees at California State University-Fresno
California State University-Fresno has a department of Food Science and Nutrition, where students can pursue an undergraduate or graduate degree in food science and nutrition. The Culinology Laboratory was funded by the USDA and is used for lectures and labs so students can gain real-world experience and conduct field research.
Bachelor of Science in Food Science and Nutrition Option in Culinology
Culinology blends food science and culinary arts allowing students to conduct research in food production and food processing and gain experience in providing culinary services. Courses include principles of healthier cooking, food safety, nutrition and culinary sciences. Participants conduct research in food science and complete an internship in the culinary arts, so they have training in both components of the program. Other food science and nutrition courses include food analysis, processing fruits and veggies, nutrition assessment and cultural foods.
Fresno City College
Fresno City College was established in 1910 and was the first community college in California. It offers three Certificates of Completion in Culinary Arts.
Certificates of Completion in Basic, Intermediate and Advanced Culinary Arts
Through these certificates, students learn how to prepare food, assess its nutritional content and present it. Learners study cooking techniques and learn how to prevent food borne illness. Courses include nutrition and health, food prep, food production and an internship in food service. The basic culinary arts certificate is 7.5 credits, the intermediate program is 8.5 credits and the advanced culinary arts certificate is 12 credits.
